Grain Free Apple Banana Muffin
Ingredients
-1/3c Birch Benders Paleo Pancake & Waffle Mix
-1 Ripe Banana, Mashed (mine weighed about 4oz)
-1/4c Liquid Egg Whites
-1tbsp All Natural Apple Butter(I used Tap 'N Apple brand)
-1/2tsp Pure Vanilla Extract
-1/2tsp Apple Pie Spice
Directions
Mash banana in a bowl and add vanilla and egg whites. Beat with mixer until smooth. Add in the remaining ingredients and beat until blended. Batter will be a medium consistency. Not thick but not super runny. Bake in the oven on 350 degrees until the center is done. I baked mine in a souffle bowl. Texas Size Muffin!!!

Grilled Hawaiian Style Turkey Tenderloin Skewers
INGREDIENTS
-1lb turkey breast tenderloins, cut into 1in cubes
-2c fresh pineapple chunks
-1 whole red onion, cut into 4ths and separated
-1/4c sugar free BBQ sauce(or your favorite)
-1/2tsp minced garlic
-1tbsp red chili paste
DIRECTIONS
In a bowl, whisk together BBQ, red chili paste, and garlic. Set aside. Layer onion, pineapple and turkey tenderloin chunks on skewers. Baste with the BBQ mixture on all sides then grill until turkey is cooked.
Enjoy over rice. Or eat by itself. Absolutely delicious.
