Low Carb Cheesecake Bites (Gluten Free/No Sugar Added)
During prep for a competition I really have to get creative on low carb days. I rarely crave sweets but when I do I want them now. I came up with these tasty little bites in desperation to kill my sweet tooth.
Approximate Macros:
Only 4 Net Carbs
6g Protein
9g Fat
Ingredients
CRUST
-2 tsp Ghee, Melted
-2 tbsp Almond Meal/Flour
-1 tbsp Coconut Flour
-1 tbsp Ground Flax Seed
-Pinch of Salt
CHEESECAKE
-1/4 c Ricotta
-1/4 c Vanilla Muscle Egg Liquid Egg Whites
-1 tsp Pure Vanilla Extract
-1 tsp Pure Lemon Extract
-1/2 tsp Cream of Tartar
-1/2 tsp Unflavored Gelatin
Directions
Mix melted butter with almond flour, coconut flour and ground flax seed. Spoon mixture into 3 silicon baking cups. Press firmly into the bottom.
In another bowl, beat the cheesecake ingredients until smooth. Pour batter into each cup until it is gone.
Bake at 350 degrees until cheesecake is firm in the middle and turning slightly brown on top. Chill overnight then remove from baking cups.
Optional: You can top with fruit or even Walden Farms Caramel Sauce. You can even add in chocolate chips if you want more carbs.

Double Chocolate Protein Waffles (Gluten Free, Dairy Free)
Why double chocolate waffles? Well, because sometimes you need dessert for breakfast.
Ingredients
- 4 TBSP Almond Flour
- 1 Scoop Purely Inspired Organic Chocolate Protein
- 1 TBSP Hershey's Special Dark Chocolate Cocoa
- 1 TSP Baking Powder
- 1 Egg
- 1/2 Cup Unsweetened Almond Milk
- 1 TBPS Enjoy Life Miniature Baking Chips
Directions
In a bowl, whisk the egg with the milk and then set aside. In another bowl, mix together protein, almond flour, dark cocoa, and baking powder. Pour egg mixture into flour base stirring until it is lump free. Last add miniature baking chips. Pour half the batter into a greased waffle iron. Batter makes 2 waffles.
*Topping is optional*
- 2 TBSP Walden Farms Caramel Syrup
- 1 TBSP Walden Farms Marshmallow Dip

Orange Cranberry Protein Muffin (low fat, gluten free)
I don't know about you but I love orange and cranberries together. The taste is so fresh and naturally very sweet. This recipe is a single serving! Yep, you do not have to share!! Yay!!
Approximate Macros per muffin: 64C/28P/4F
Ingredients
-1/2c FlapJacked Buttermilk Protein Pancake Mix
-1/3c Oikos Zero Vanilla Yogurt
-3tbsp Unsweetened Vanilla Almond Milk
-1/4tsp Pure Vanilla Extract
-1/4tsp Pure Orange Extract
-1tbsp Raw Unfiltered Honey
-20g Reduced Sugar Dried Cranberries
Directions
Heat oven to 350 degrees. In a bowl, mix yogurt, milk, vanilla extract, orange extract and honey. Then add FlapJacked mix and beat with small whisk or fork until smooth. Last add in dried cranberries. Bake 20-25min or until top is starting to brown.
I used a souffle pan to bake mine in. It makes the perfect giant size muffin.

Easy Chicken Tortilla-Less Soup
This recipe took me no more than 3 minutes to prep. It fit my meal plan and was full of flavor. If you need a quick recipe this is a great go-to.
Ingredients
-1cup Black Beans
-1/3cup Shredded Chicken(I used all natural canned chicken)
-1/2cup Water
-2tbsp of Salsa(any brand)
-2tsp Fajita Seasoning
Optional: Diced avocado & shredded cheese for garnish.
Directions
Place ingredients in a bowl and heat when ready to eat. Then top with optional avocado and shredded cheese.
