Cinnamon French Toast


Everyone in my house is still sleeping and it is 8:21am. This is extremely rare. So why not make myself a huge stack of French toast that I can have all to myself.

Approximate MACROS: 
64g Carbs
16g Fat
23g Protein

Ingredients

  • 4 Slices of Sam's Choice Gluten Free White Bread
  • 1/2 Cup Liquid Egg Whites + 1 Whole Egg
  • 2 Tbsp Full Fat Coconut Milk
  • 1 Tsp Monk Fruit in the Raw
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Tsp Vanilla Extract



*I have to note the Sam's Choice Gluten Free breads are amazing. They have Classic White and Multi-Grain Gluten Free. This is the FIRST gluten free bread I actually like in regards to taste and texture. I'm very impressed.


Directions
In a bowl, whisk all ingredients except bread. In a shallow dish place slices of bread at the bottom and pour the liquid mixture over them. Let each side of the bread soak about 10 minutes, or until the bread has absorbed most or all of the liquid. There may a little excess liquid.
On a skilled or griddle spray cooking spray and place bread on heat. Cook each side until it is browning.

I topped mine with sugar free syrup.

Breakfast Pizza


When you want breakfast.....but pizza sounded really good too. Yep, you get a breakfast pizza!

Ingredients

  • 1 Container Hungry Jack Hashbrown Potatoes
  • 2 Tbsp Coconut Oil
  • 1/4 Cup Kirkland Real Bacon Crumbles
  • 2 Whole Eggs + 4 Egg Whites
  • 112g Sharp Cheddar Cheese


Directions
Heat oven to 425 degrees. Fill potatoes with water as directed on the box. Let soak for 12-15 min. Scramble eggs and set aside. In a nonstick skillet heat coconut oil. Once potatoes are done soaking pour potatoes into oil. Sautee until potatoes are turning slightly brown. Spread potatoes evenly on a baking sheet. Bake in oven until potatoes are starting to get crispy. Remove and place scrambled egg on top followed by the cheese and bacon. Place pizza back in oven until cheese is starting to brown.
