Stuffed Mushrooms



Ingredients
*6 portobello mushrooms, rinsed and insides removed
*4 slices of bacon, cooked and chopped into pieces
*2 eggs
*1 cup of spinach, chopped
*1/4 teaspoon salt
*1 1/2 cup of Ezekiel 4:9 cereal, processed in food processor until it becomes a flour consistency 
*1 teaspoon Mrs. Dash Salt Free Extra Spicy
*1 teaspoon Mrs. Dash Salt Free Onion & Herb
*1 1/4 cup part skim shredded mozzarella
*1 fresh jalapeño, sliced thin


Directions
Set oven to 350 degrees. Spray a 9x13 inch pan with cooking spray and set it aside. Whisk eggs in a bowl and set aside. In a separate bowl, place the cereal, which should equal to about 1 cup processed. Add season and salt; mix around with a fork. Then add spinach, bacon, and 1/2 cup of the mozzarella. Pour in whisked eggs and stir all ingredients together. Place mushrooms in the greased pan, bottom up. Spoon mixture into mushrooms and top each with the remaining cheese. Lastly, top mushrooms with 1 jalapeño slice. Bake in oven until the cheese is starting to brown.

Pumpkin Protein Whoopie Pies with Chocolate Chips and Cinnamon Cream Cheese Filling



Ingredients
1 cup oat flour
2 scoops vanilla chai protein(I used Fitmiss)
1/4 tsp salt
1/2 tsp baking soda
1/2 cup pumpkin puree
1/3 maple syrup
2 egg whites(I used liquid egg white)
1 tsp pure vanilla extract
1 cup dairy free baking chips(EnjoyLife miniature baking chips)
1 tsp cinnamon
pinch of nutmeg

Filling
1/2 cup greek yogurt whipped cream cheese
2 tbsp small curd cottage cheese 2%
2 tbsp nonfat plain greek yogurt
1 tbsp pumpkin puree
1/4 cup stevia
1 tsp cinnamon
2 tbsp coconut flour
1 scoop vanilla chai protein powder


Directions
Preheat oven to 350 degrees. Place filling ingredients in a bowl and use a hand mixer to beat it until mostly smooth. Then place bowl back into the refrigerator so the filling can harden back up some.
In another bowl place oat flour, protein powder, salt, baking soda, cinnamon and nutmeg.  Mix it around with a fork until the ingredients are mixed together. Then add egg whites, pumpkin puree, vanilla extract, and maple syrup. Mix together. Fold in chocolate chips (consistency wont be really thick like normal dough).
Place spoonfuls of the mixture on a baking sheet and cook 12-15min(cooking time will vary depending on the size of whoopies.
Once they have baked and cooled place filling between two. Then refrigerate.

Easy Enchilada Bake



Ingredients
-1 brown rice boil-n-bag
-1/2 c canned black beans(I used reduced sodium)
-1/2 c whole kernal corn
-1/2 c hot rotel
-8 oz ground beef
-1 c 2% shredded cheddar
-1 c enchilada sauce
-4 tbsp sliced black olives
-3 tbsp jalapeños
-1 tbsp red onion, chopped

Directions
Set oven to 350 degrees. Cook ground beef, drain fat, and set aside. Boil rice and drain water. In a bowl place the rice, black beans, corn, rotel, enchilada sauce and the ground beef. Stir all ingredients together. Spread mixture into 9x9 pan. Top with cheese, jalapeños, black olives and onion. Bake for about 30-35min or until cheese has browned slightly.

Serves 6
*I topped mine with cilantro and 2 tbsp plain greek yogurt(better alternative than sour cream)

Cinnamon Pumpkin Raisin Protein Bread





Cinnamon Pumpkin Raisin Protein Bread    
Ingredients
  
1 cup oat flour
2 scoops vanilla whey protein
2 tbsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
4 egg whites
3/4 cup sugar free maple syrup
3/4 cup pumpkin puree
1/4 cup unsweetened applesauce
1 cup raisins

Directions

Set oven to 350 degrees. Mix all dry ingredients in one bowl(except raisins) and set aside. In another bowl, add all wet ingredients and beat until smooth.
Pour wet mixture into dry ingredients and beat until smooth. Fold in raisins.
Spray bread pan with nonstick spray and pour batter into bread pan. Bake until center is done......enjoy!!!
