Easy Enchilada Bake



Ingredients
-1 brown rice boil-n-bag
-1/2 c canned black beans(I used reduced sodium)
-1/2 c whole kernal corn
-1/2 c hot rotel
-8 oz ground beef
-1 c 2% shredded cheddar
-1 c enchilada sauce
-4 tbsp sliced black olives
-3 tbsp jalapeƱos
-1 tbsp red onion, chopped

Directions
Set oven to 350 degrees. Cook ground beef, drain fat, and set aside. Boil rice and drain water. In a bowl place the rice, black beans, corn, rotel, enchilada sauce and the ground beef. Stir all ingredients together. Spread mixture into 9x9 pan. Top with cheese, jalapeƱos, black olives and onion. Bake for about 30-35min or until cheese has browned slightly.

Serves 6
*I topped mine with cilantro and 2 tbsp plain greek yogurt(better alternative than sour cream)
