Spicy Chicken and Spinach Meatballs


Ingredients

-1lb Lean Ground Chicken
-3c of Raw Spinach, chopped
-1/2c of Almond Meal/Flour
-1 Egg
-2tbsp Huy Fong Foods Sambal Oelek Ground Fresh Chili Paste
-Optional: Salt & Pepper

Directions
Heat oven to 375. In a bowl, mix together all ingredients. Spoon mixture on to a baking dish or on non stick pan. I made mine 1-2inch in size and it made 20 meatballs. Bake in oven approximately 25-30min.

Simple Spaghetti Squash Chicken Spaghetti



Ingredients
-1c Spaghetti Squash
-1/4c No Salt Added Rotel Tomatoes
-2tbsp Fat Free Cream Cheese
-4oz Chicken, Baked or Grilled and Shredded
-2tbsp Unsweetened Almond Milk
-Salt & Pepper Optional

Directions
-Heat oven to 375. Cut spaghetti squash in half from top to bottom. Remove seeds. Spray baking sheet and spaghetti squash with olive oil spray. Bake about 40min. Baking time will depend on the size of the squash. Make sure you can pierce outter shell with a fork to determine when it is done baking.
Once baked use fork to scrap out spaghetti squash. Mine made about 4 meals worth.

Use 1 cup of squash. Add in cream cheese and mix until melted. Add almond milk, rotel and shredded chicken. Salt & pepper to taste.

Low Carb Boston Cream Pie Inspired Pancakes



My low carb days require creativity. Breakfast is my favorite meal of the day. And on top of that I refuse to go a day with out pancakes or waffles. Lol.

Ingredients

Pancakes:
-1 scoop of BarnDad's Fiber DX
-2tbsp Ground Flax Meal
-1tbsp Stevia Powder
-1/2tsp Baking Powder
-1/4c Unsweetened Almond Milk
-1tsp Imitation Butter Extract
-1tbsp Torani Sugar Free French Vanilla Flavoring
-9tbsp Liquid Egg Whites

Cream Filling:
-1/2 scoop Quest Vanilla Milkshake Protein Powder
-2tbsp NonFat Plain Greek Yogurt
-1tsp Vanilla Extract
-3tbsp Unsweetened Almond Milk

Chocolate Sauce
-1/8c Walden Farms Chocolate Syrup



Rice Cake Chicken Tostadas


Ingredients
-2 low sodium rice cakes
-1 Wholly Guacamole avocado mini
-1/2c butter lettuce
-4oz grilled chicken, shredded
-1oz tomato, chopped
-1tbsp nonfat plain Greek yogurt
-2 pinches of Mrs Dash salt free taco seasoning


Directions
Layer all ingredients in the order above on each rice cake.

Protein Snickerdoodle Cookies

Ingredients
-1 Scoop Quest Vanilla Milkshake Protein Powder
-1tsp ground cinnamon
-2tsp imitation butter extract
-2tbsp Stevia powder
-1tbsp Torani sugar free French Vanilla flavored syrup
-1 egg

Directions
-Heat oven to 250 degrees. In a bowl mix together protein powder, cinnamon, and stevia. Then add egg, butter extract, and Torani flavor. Spoon mixture on a greased cookie sheet. Bake approximately 20min. Let cool slightly then use a flat spatula to remove the cookies. This made about 5-6 cookies. They were nice a chewy in the middle.

Hummingbird Cake Protein Donuts with Protein Glaze


Ingredients For Cake Donuts
-1c FlapJacked Buttermilk Pancake/Baking Mix
-4oz ripe banana, mashed
-4oz canned crushed pineapple, drain juice and set aside
-1/2 scoop Question Multi Purpose Protein Mix
-1/2tsp baking powder
-1/2tsp ground cinnamon
-1/2c organic rice milk
-2tbsp Torani sugar free vanilla flavor

Protein Glaze
-2tbsp light cream cheese, softened
-1/2 scoop Quest Vanilla Milkshake Protein
-3 tbsp pineapple juice


Directions
Heat oven to 350 degrees. Spray donut pan with non stick spray. In a bowl, mash together all ingredients until smooth. Mixture may have some lumps from pineapple and banana.
Put batter into donut pan and bake around 22minutes.

Remove from oven and let donuts cool.

While donuts are cooling mix cream cheese, vanilla protein and pineapple juice in a small bowl.

Spread glaze over donuts.

I topped with chopped pecans. (15g) But this is optional.

Refrigerate if you do not eat them right then. This recipe made 8 donuts.

-3cups arugula
-1cup diced watermelon
-16g of roasted & salted macadamia nuts with rosemary
-1tbsp balsalmic dressing
-1/8c feta cheese crumbles
