Simple Spaghetti Squash Chicken Spaghetti
Ingredients
-1c Spaghetti Squash
-1/4c No Salt Added Rotel Tomatoes
-2tbsp Fat Free Cream Cheese
-4oz Chicken, Baked or Grilled and Shredded
-2tbsp Unsweetened Almond Milk
-Salt & Pepper Optional
Directions
-Heat oven to 375. Cut spaghetti squash in half from top to bottom. Remove seeds. Spray baking sheet and spaghetti squash with olive oil spray. Bake about 40min. Baking time will depend on the size of the squash. Make sure you can pierce outter shell with a fork to determine when it is done baking.
Once baked use fork to scrap out spaghetti squash. Mine made about 4 meals worth.
Use 1 cup of squash. Add in cream cheese and mix until melted. Add almond milk, rotel and shredded chicken. Salt & pepper to taste.
