Chewy Chocolate Chip Protein Cookies (Vegan/Paleo/Gluten Free Friendly)
Ingredients
-1 Flax Egg*
-1 Scoop Nutrition 53 Vanilla Vegan 1
-1/4 tsp Cream of Tartar
-1/4 tsp Baking Soda
-1/2 tsp Vanilla Extract
-1 tsp Butter Extract
-3 tbsp Stevia Powder
-1/2 tbsp Coconut Oil, Melted and Cooled
-1/2 tbsp EnjoyLife Foods Dark Chocolate Baking Chips
Directions
Heat oven to 350 degrees. In a bowl, mix all ingredients until a dough forms. Roll dough into 1 inch balls. Dough makes about 3 cookies. Bake approximately 15 minutes. Cookies will be firm and browned but chewy in the middle.
*To make a flax egg mix 1 tbsp ground flax seed with 3 tbsp of water and let sit for 15-30 minutes.
