Quinoa Pasta Salad with Creamy Tahini Lemon Dressing
*4oz Quinoa Spiral Noodles
*Two 5oz Chicken Breast- cut into small cubes
*2c Asparagas- cut into pieces about 1in long
*1c Fresh Basil- chopped
*4 Mushrooms- sliced
*1/2c Goddess Dressing by Simple Truth Organics
*1tsp Minced Garlic
*1tbsp Coconut Oil
Cook pasta as directed. Rinse with cool water, set aside.
Sautée chicken, mushrooms, asaparagas, and garlic in coconut oil. Drain any access liquid. Let cool 10-15min. Add sautéed mixture to pasta, mix in dessing and basil.
Refrigerate overnight.

Gluten Free White Chocolate Pumpkin Bread
1/2 Cup Brown Sugar Packed
1 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Vanilla Extract
1 Can Pure Pumpkin
1/2 Cup Milk (I used soy milk to reduce the lactose)
1/2 Tsp Nutmeg
1 Tsp Cinnamon
3 Egg Whites
1 Bag White Chocolate Baking Chips
Set oven to 350 degrees. In one bowl whisk the baking & pancake mix, brown sugar, baking powder, baking soda, nutmeg, and cinnamon. In another bowl use a hand mixer to beat the eggs, pumpkin, vanilla and milk until smooth. Add the wet ingredients to the dry ingredients, mix until smooth. Add the bag of white chocolate chips and stir them in.
If using a normal size loaf pan bake 1hr to 1hr 15min.
If using a personal size loaf pan (8 loaves per pan) bake 30-35min.
Chewy Protein Granola Bars
◆ 4 scoops cake batter whey
◆ 3/4 c unsweetened almond coconut milk
◆ 2 T ground flax seed
◆ 1/3 c almond butter (melted in microwave)
◆ 2 c quick oats
◆ 1 c almond flour
◆ Topping = 3 tbsp Enjoy Life Chocolate Chip Chunks- microwaved for 30-40 sec with 1 tsp coconut oil.
Mix all ingredients in a bowl and then press into a 9x9 pan. Top bars with drizzled chocolate and refrigerate at least 2-4 hours.
Cut into squares once they have set.
*This made about 8 squares for me but depends on how big you want them.
*Also you could use any flavor of protein to change up the taste.
*Or substitute the almond butter for peanut butter
*1 cup oat flour
*2 scoops vanilla whey protein
*2tablespoons dark chocolate cocoa powder
*1/2teaspoon baking soda
*1/4teaspoon salt
*4egg whites
*3/4 cup stevia
*two 4oz gerber babyfood applesauce
*4oz water(I just filled one of the baby jars full of water)
*1/2cup chopped walnuts(optional)
*1/2cup chocolate dream dairy free baking chips
Mix dry ingredients in one bowl. Wet ingredients in another. Add wet to the dry. Beat with mixer. If using nuts then mix into batter last. Bake 350 until center is done.
