Paleo Friendly Double Chocolate Chip Cookies
Ingredients
1/2c EnjoyLife mini chocolate baking chips
1 1/2 cups almond flour
1/2 cup unsweetened dark cocoa
1/2 teaspoon baking soda
1/2 teaspoon sea salt
8 tbsp coconut butter
1c coconut palm sugar
2 large eggs
1 tsp pure vanilla extract
Instructions
Preheat oven to 350 degrees.
In a bowl combine the almond flour, cocoa, baking soda, salt and sugar; mix together with hand mixer.
Add the coconut butter and mix again.
Add the eggs and vanilla then mix.
Fold in mini chocolate chips
Roll dough into 1in balls and place on baking stone(or greased cookie sheet)
I flattened the dough balls some, as they don't really spread while baking.
Bake 10-12 minutes. The cookies will be soft when you take them out of the oven, but firm as they cool, so do not to over bake.
