Protein Banana Muffins with Peanut Butter Protein Frosting


Ingredients for Muffins
-5.3oz plain greek yogurt
-2 overripe bananas
-2 eggs
-1c Flapjacked Banana Hazelnut waffle/pancake mix
-2 scoops of vanilla WPI
-1/4c stevia powder
-1 1/2tsp baking powder
-1/2tsp baking soda

Directions
Place all ingredients in a bowl and beat with a mixer. Line muffin pan with muffin liners. Bake at 350 degrees until the middle is done. Makes about 10 muffins. When baking with protein powder do not over bake. And if your oven runs hotter than most I would cook at a lower temp.

Ingredients for Frosting
-8oz light cream cheese
-4tbsp PB2
-1tbsp Jiff Whips peanut butter
-2tbsp Torani sugar free vanilla syrup
-4tbsp stevia powder
-1 scoop vanilla WPI

Soften cream cheese. Then add other ingredients. Beat mixture until smooth. Frost the muffins once they have cooled. And dust with cinnamon.

Store in refrigerator until you are ready to eat.

Blackberry Protein Bread Pudding with Lemon Protein Icing

This was absolutely delicious.  And the best part is you could use any fruit you wanted. So I decided next time I'm going to try blueberries or maybe even banana. Yummy!!!

Okay so here is the goods......



Ingredients

Bread Pudding
-2 slices of Ezekiel Bread
-1 whole egg
-3tbsp liquid egg whites
-1/2tbsp EVOO
-1tbsp stevia powder
-1/4tsp cinnamon
-1/2c Unsweetened Almond milk
-1/2c frozen blackberries
-1/2 scoop vanilla WPI
-1/4tsp vanilla extract

Lemon Protein Icing
-1/2 scoop vanilla WPI
-1/2tbsp stevia
-3tbsp liquid egg whites
-1/4tsp vanilla extract
-1tbsp coconut flour
-1tbsp Unsweetened Almond milk
-1tbsp pure lemon juice

I recommend putting this together and letting it sit in the fridge for at least 1-2 hours to make sure the bread has fully absorbed the liquid.

Heat oven to 350. Cut bread into 1in cubes and set aside. In bowl, whisk milk, stevia, egg, vanilla WPI, cinnamon, vanilla and EVOO. I used a small Pyrex dish to bake this in. Layer the bread cubes, fruit and mixture until all ingredients are gone. Making sure bread is completely covered with liquid. Bake until center is no longer liquid. In my oven it was about 45min with the baking dish I used.

While the bread pudding is baking, mix all the ingredients for the icing in a small bowl and set aside. 

Once baking is complete pour the lemon icing over the top and enjoy. You can even top with a little more fruit or some nuts.

Green Power Smoothie


*1 cup of ice
*2 scoops Herbalife Formula 1- Orange Cream
*1 scoop Herbalife Apple Fiber Complex
*3 cups of raw spinach
*1 cup Unsweetened Almond milk
*5 egg whites
*3/4 teaspoon banana extract
*.5 Oz of chia seeds
