Fluffy Vanilla Waffles (Grain Free/Dairy Free)


Did I mention before how much I LOVE breakfast? Lol

Here is a grain free and dairy free vanilla waffle recipe. These were very moist and fluffy. Great breakfast to start of my day!

Ingredients

  • 4 TBSP Almond Flour
  • 3 TBSP Coconut Flour
  • 1 TBSP Tapioca Flour
  • 1 TSP Pure Vanilla Extract
  • 2 TBSP Unsweetened Apple Sauce
  • 4 TBSP Unsweetened Vanilla Almond Milk
  • 6 TBSP Liquid Egg Whites


Directions
Mix all ingredients in a bowl until blended. Batter will be a little thick. Spoon 1/4 cup mixture into a greased or nonstick waffle iron. Makes about 4 waffles.

Jalapeno Chicken Zucchini Dippers



Ingredients

  • 1lb Ground Chicken
  • 1/2 Cup Almond Flour
  • 1 Large Egg
  • 2 Cups Zucchini
  • 2.5 Ounce Onion
  • 1 Bunch of Cilantro
  • 1 Jalapeno Pepper
  • 2 Tsp Sea Salt
  • 2 Tsp Mrs. Dash Fiesta Lime Seasoning
  • 1 Tsp Minced Garlic



Directions
Heat oven to 350 degrees.
Using a food processor grate zucchini, onion, jalapeno pepper and cilantro into fine pieces and place into a bowl. Add all remaining ingredients and mix together. I used two 24 count mini muffin pans. However the recipe only made 28 dippers. Bake dippers for 25-35 minutes or until the tops are starting to brown.


**I squeezed limes over the dippers while eating them and dipped them into avocado. You could also dip in sour cream, salsa, or ranch! Or enjoy just by themselves. These are VERY tasty!**

Smokehouse Maple Potatoes



These potatoes were absolutely amazing. I could have easily bought a smokehouse maple seasoning. But I am trying to limit my intake of packaged foods where I can. I realize seasonings are just herbs and spices. But most contain a high amounts of salt and sometimes sugar. These do not. I served my potatoes with an egg white omelette filled with spinach, mushroom and bacon. Yum!


Ingredients

  • 4 to 5 Baby Yellow Potatoes
  • 1/2 TBSP Coconut Oil
  • 1/2 TBSP Pure Maple Syrup
  • 1 Pinch Mrs. Dash Salt Free Garlic & Herb Seasoning
  • Dash of Chili Powder
  • Dash of Paprika
  • Dash of Sea Salt
  • Dash of Ground Black Pepper


Directions
Dice potatoes into small pieces and set aside. Heat all other ingredients in a nonstick skillet until it is bubbling. Put potatoes in and cook until brown.

Single Serving Pumpkin English Muffin



Hey Everyone!!!

I still have pumpkin left from yesterday's recipe. So, in an effort to not waste food I decided to give another pumpkin recipe a go. This was AMAZING! So soft and fluffy. Believe it or not went great with some Canadian bacon and egg thrown on there for some additional protein. =)






Ingredients
  • 2 TBSP Arrowhead Mills Organic Buckwheat Pancake & Waffle Mix
  • 2 TBSP Pumpkin Puree
  • 1 Large Egg
  • 1 TBSP Organic Maple Syrup
  • Pinch of Salt
  • Pinch of Ground Cinnamon
  • 1/2 TSP Organic Vanilla Extract



Directions
Heat oven to 350 degrees. In a bowl, whisk all ingredients together. Pour batter into a greased souffle bowl. Bake until center is done and muffin is golden brown.

Like I said, I put Canadian bacon and egg on mine. It gave it that sweet & salty taste. This recipe is great by itself, with nut butters, jelly, etc. The options are endless.

**You can also use pureed banana or apple sauce to change the flavor of this muffin. Add nuts for a little extra texture. Or even omit the cinnamon and add some herbs of choice if you want a more hearty flavor from the pumpkin**

Pumpkin Waffles or Pancakes (Grain Free/Dairy Free)



You know I can't go 30 days without waffles and pancakes.

So here is my first recipe in the books for the 30 day challenge I am doing. And I must say it was delicious after my workout this morning. I made waffles but you could make pancakes too. These were fluffy and not really sweet. Which was perfect because I topped mine with organic maple syrup. The REAL stuff!!!

Approximate MACROS: 50C/14F/20P


Ingredients
-1/4 Cup Tapioca Flour
-1/4 Cup Almond Flour
-10g Coconut Palm Sugar
-2 Tbsp Pumpkin Puree
-1/2 Tsp Vanilla Extract
-1/2 Tsp Baking Powder
-1 Tsp Ground Cinnamon
-1/2 Cup Liquid Egg Whites

Directions
Put all ingredients in a mixing bowl and beat with hand mixer. Pour desired amount of batter into a waffle iron or use nonstick skillet for pancakes.

Cut The C•R•A•P!
-My 30 Day Challenge-

I started writing this blog entry months ago but like everyone else in the world self control got the best of me and my excuses. I mean who doesn't want to eat whatever they want too....whenever they want too.

What is this blog all about? I am referring to C•R•A•P!

-Caffeine
-Refined Sugars
-Artificial Ingredients
-Packaged Foods

CRAP!

It wasn't until my 30's I became more aware of the foods and drinks I was putting into my body. But yet I still continue to stop for that energy drink or morning breakfast sandwich from the nearest fast food joint. I even resort to grabbing the easiest thing from the pantry at home just because I am short on time.
So here I am again.....the same place I was months ago. Attempting to cut the CRAP!

I have battled the back and forth of doing this 30 day challenge multiple times. But this time I mean business.

I can remember my whole life being irregular, constantly fatigued, skin issues, sleeping problems, and problems with anxiety. And most recently not being able to meet certain fitness goals due to self sabotage of my diet regimen. I mean I LOVE FOOD!!!

Even my "healthier options" are not as healthy as they could be.

This challenge is not categorized into any specific "diet." I guess you could view it as a cleanse? I want to get my gut healthy!

This challenge is an attempt to cut the caffeine, refined sugars, artificial ingredients and packaged foods. To reset my body and see what foods really agree and disagree with me personally. I have no known food allergies yet still have digestive issues amongst the other issues I listed previously.

Now before you say "Oh my gosh this sounds horrible!"....."What is she going to eat?".....

There are some foods I'd find acceptable even though they are packaged. For example, organic products. Or oats, quinoa, rice, beans, etc. However I will be cutting all grains & dairy for a while to later introduce them back into my diet.

Another thing in question could be coffee and green tea because they contain caffeine. When I say 30 days without caffeine I mean energy drinks. I am one of those people who needs a punch card for energy drinks. I am constantly stopping at the local gas stations for a quick pick me up.

This will be a slow process over the next 30 days. One reason is because I still have healthy foods in my home I will not let go to waste. Like my cottage cheese.....maybe a few other items that aren't necessarily bad for you. But are still processed in some form.

This will require a lot of creative cooking and meal prepping. But I'm going to give it a go.
And of course I will share recipes, thoughts, and some of my daily food choices just so you can see how my process is going.

One day at a time!!!!
