Low Carb Breakfast Muffins
Ingredients
-2 cups finely diced cauliflower
-2 tbsp ghee, melted and cooled
-2 eggs, beaten
-1 poblano pepper, diced
-1 cup diced ham
-1/4 cup grated Parmesan
-1 cup shredded mozzarella
-1 cup shredded sharp cheddar
-1 tsp seasoning of choice
-1/2tsp baking powder
-1/4c flour of choice
Directions
Heat oven to 350 degrees. In a bowl, mix together flour, baking powder and seasoning. Set aside.
In a separate bowl, mix together cauliflower, poblano pepper, ham, eggs, cheeses and melted butter. Then add flour mixture to the ingredients. Pack mixture into a greased muffin pan. I used a 12 spot muffin pan. Recipe made 12 muffins.
Bake for 30-45min or until cheese is starting to brown.
Optional: you can top with sour cream and chives or even white gravy. These are very savory!
