Banana Double Chocolate Chip Muffins
This was a super quick recipe I made this morning. I didn't have time to really cook a big breakfast. Took 5 minutes to prep and I baked them while I was in the shower.
Ingredients
-2 Scoops Chocolate Lean 1
-1/2 Cup Kodiak Cakes Oat Pancake & Flapjack
-4 Ounce Mashed Banana
-1/4 Cup Unsweetened Vanilla Almond Milk
-3/4 Cup Liquid Egg Whites
-7 Tsp EnjoyLife Miniature Chocolate Baking Chips
Directions
Heat oven to 350 degrees. In a bowl, using a hand mixer, beat all in ingredients except chocolate chips. Once mixture is lump free pour batter into silicon baking cups. Top each muffin with 1 teaspoon of chocolate chips. Recipe makes 7 muffins. Bake for 25 minutes or until center is cooked through.

Cafe Mocha Double Chocolate Chip Protein Cookie
I needed a quick pick me up today while working.....so this is what I came up with. I didn't want a cup of coffee so why not put the coffee in a cookie? Simple ingredients and about 12 minutes to cook. It made a quick snack, and it killed my sweet tooth.
Ingredients
- 1 Scoop Chocolate Lean1
- 2 Tbsp Stevia Powder
- 1 Tsp Hershey's Dark Chocolate Cocoa
- 1/2 Tsp Nescafe Instant Dark Roast Coffee
- 1 Tsp Vanilla Extract
- 3 Tbsp Liquid Egg Whites
- 1 Tbsp Enjoy Life Miniature Baking Chips
Directions
Heat oven to 350 degrees. In a bowl, mix Lean1, cocoa, instant coffee, stevia, vanilla, and egg whites. Once mixture is lump free add in the baking chips. I made 1 giant cookie by putting the dough onto a nonstick cookie sheet and baked cookie for 12 minutes. However, you could divide the dough and make two cookies.
Note: The cookie dough will have the slight consistency of brownie batter however it is not too runny and sets well in the oven. The cookie will turn out very soft and fluffy.
